Hey there,
I've decided to begin writting articles while still adding content to my sites. I was just wondering if people should submit the same article to several "article sites" or should you just submit each unique article to one site only.

I've found a terrific little e-book that is free that talks about article wrapping to avoid the duplicate content filter. You can encourage sites using your article to do this...

Submit to as many places as you can.
You can switch paragraphs a little if you are doing things by hand.
I prefer to use a service such as Article Marketer. Whilst I probably only achieve 70% of the maximum effect of an article by not switching arounf the body and bio, I gain by it only taking me 5 minutes to submit an article.
